Sunday, November 15th, 2020 - Texas-Style BBQ Fundraiser

The Knights of Columbus Council at Mount St. Francis, with the great support of parishioners, are able to help many charity organizations and efforts serving the Pikes Peak region. A big part of our charitable funding comes from the many breakfasts and dinners we have throughout the year in the Parish Hall. Since the start of the pandemic, many of our fundraisers have been canceled in accordance with Church and State mandates to help keep our parishioners safe.

To help make up for all the missed fundraising events, we're hosting a Texas-style BBQ in the Parish lawn. Parish Knights will be smoking meat, preparing sides, and ready to place your order in your trunk or back seat as you drive up to our table in the church driveway.

Is a BBQ Safe in a Pandemic?

Adopting a touch-free approach, our Knights will be wearing hats, gloves and face masks as we prepare and package your food for pickup. No finished food item or pickup container will be handled without PPE gear on.

What is "Texas-Style" BBQ?

My version of Texas-Style BBQ, greatly influenced by world famous BBQ Master Aaron Franklin from Austin Texas, is a ritual that begins by selecting the best Prime briskets available. Prime briskets are well marbled to produce a finished product that is moist, flavorful and very tender. Then, the prime briskets are trimmed leaving only a 1/4 inch top fat layer. This layer will caramelize during the smoking process basting the underlying meat in it's own juices. The trimmed briskets are then amply coated with a special dry mix of seasoning that both adds subtle flavors and brings out the natural flavor of the beef. The caramelized top layer dripping over the briskets during the smoking process combined with the dry rub make a flavorful outer "bark" covering. After the dry rub is applied, the briskets go into the smoker at a low 250 degree temperature, basking in smoke from a choice hardwood blend for about 4-6 hours until the smoke absorption and internal temperature are ready for the next step. The briskets are then removed from the smoker, drenched in a special sauce (home made spiced vinegar, garlic, butter, and other seasoning if you like it spicy!), and then wrapped up tight to keep moisture in and placed back into the oven for a continued slow-cook at 225 degrees until the internal temperature reaches that magical temperature where you can cut a slice of brisket and gently pick it up, but if you shake it, it falls apart.

Will there be extra food for walk-ups/drive-ups that did not order in advance?

No. We're planning on smoking exactly what people order. We have this down to a science now and know exactly how much attrition to expect from the trimming and smoking process. We will be buying and smoking meat according to the orders received.
